Grilled Berries With Fresh Coconut Date Cream

 

Part of the glory and bounty of summer is all fruits in season! It seems all of nature is brimming with sweetness and juicy fruits. 

Mama nature always gives us what we need, as fruit is cooling and hydrating, providing us with just the right medicine for those hot summer days. 

Cooked fruit is easier to digest and reminds me of homemade pie (minus the crust). You can add so much variety to this recipe depending on what is available at your local farmers market. I like grilled peaches and blueberries, or blueberries and strawberries the best; but feel free to experiment with your own variations! 


Ingredients:

FOR THE FRUIT:

2 cups strawberries 

1 cup blueberries 

1 tbsp maple syrup 

½ tbsp ghee

½ tsp cardamom powder

½ tsp cinnamon 


FOR THE CREAM:

1 whole young thai coconut (the meat and water blended)

2 medjool dates (pitted and chopped)

Pinch cardamom 

Pinch of mineral salt 

½ tsp vanilla extract 


INSTRUCTIONS:

FOR THE FRUIT 

1. First wash and chop your strawberries removing he tops. 

2. Next get a cast iron skillet or pan and add the ghee and spices and turn on flame to low.

3. Once the spices and pan has warmed, add the strawberries and stir to coat them in the spices and ghee.

4. Continue to cook on a medium low flame until the berries look soft, like pie filling. 

5. Then lastly add the blueberries and maple syrup and cook for 1-2 more minutes. This helps the blueberries not become completely disintegrated as they will retain some of their shape while still being soft. 


FOR THE CREAM:

1. Crack the coconut open.

2. Pour the water into a vessel and set it to the side as you scoop out and clean the coconut meat. (please see my coconut cream pie recipe for more detailed instructions here).

3. Next add all the ingredients and blend until smooth. My tip is to measure 1 cup of the coco H2O and save the rest to drink so the mixture is thick. This really depends on how much meat is in your coconut. So adjust to your liking. 

3. Save the extra cream and enjoy for the days to come. That means don't eat all of it in one sitting! Or at least try not to!
